For example, Swiss chard that has been growing all summer will continue to grow all winter if you put a cold frame over it in October or November. Just don't expect to sprout Swiss chard (or much else) from seed in November and see it thrive. And even the mature chard in the cold frame will double its growth rate once February arrives, in response to the increasing daylight and warmth. After the solstice, everything in the winter garden will begin to grow faster (unfortunately, this is also true of winter-hardy weeds, like perennial broadleaf grasses).
